Abstract
En el ámbito del Río de la Plata la carne vacuna formó parte del consumo cotidiano de
sus pobladores convirtiéndose, tempranamente, en un alimento fundamental en el contexto
de la economía colonial. Su abastecimiento así como la fijación del precio estaba regulado
por el Cabildo. Precisamente, poniendo la mirada en la ciudad de Buenos Aires hemos
centrado nuestro análisis en los precios de la carne para consumo tratando de determinar la
incidencia que la abundancia de ganado como la regulación del Cabildo tuvieron a lo largo
del periodo colonial en el ámbito de una economía con fuertes rasgos de Antiguo Régimen.
Tomaremos en este análisis el periodo que comienza cuando el abasto de carne está a
cargo de la institución del “estanco” hasta el periodo en que es reemplazado por un circuito
de producción-comercialización conformado por productores-abastecedores - corraleros y
carniceros, con una dinámica más compleja.
In the Rio de la Plata area, beef was part of daily consumption, becoming an essential food in the context of the colonial economy. Its supply as well as the fixing of the price was regulated by the Cabildo. Precisely, looking at the colonial city of Buenos Aires we have focused our analysis on the prices trying to determine the incidence that the abundance of livestock as the regulation of the Cabildo, had throughout the colonial period in the scope of an economy with strong Traits of Old Regime. This look will cover the period that begins at the moment when the supply of meat is in charge of the institution of the "estanco" until the period in which it is replaced by a production-marketing circuit made up of producers-suppliers - corraleros and butchers, with a more complex dynamic.
