Abstract

The volume of information available to analyze the phenomenon of the wine and oil production in the interior of the Iberian Peninsula, in Roman times, is still limited. Nevertheless, the archaeological interventions carried out in the recent years, mainly in rural areas but also in urban contexts, allow to trace the lines for the better knowledge of that production. Among them, it is particulary remarcable the case of the the villa of Carranque (Toledo). The archaeogical interventions of 2007 and 2008 were focused on an important productive complex: primarily mainly for oil production and, for de - cades, also wine production. The complex is characterized by an active constructive dynamics, developed continuously throughout all the fourth century A.D.
